Gulai Kambing (Curried Goat)



Bahan (Ingredients):
½ kg daging kambing (½ kg mutton)
¼ butir kelapa (¼ coconut)
2 sendok makan minyak samin/ margarine  (2 tablespoons cumin oil / margarine)

Bumbu  (Seasonings):
1 sendok makan serbuk bumbu gulai/ bumbu kare (1 tablespoon curry powder seasoning / spice curry)
5 buah bawang merah  (5 pieces of red onion)
3 siung bawang putih  (3 cloves garlic)
4 buah cabe merah  (4 pieces of red chilli)
1 batang sereh (1 stalk lemon grass)
1 ruas jari laos (1 knuckle laos)
2 helai daun jeruk purut (2 kaffir lime leaves)
2 sendok makan air asam  (2 tablespoons tamarind water)
1 sendok makan garam  (1 tablespoon salt)

Cara Membuat  (How to Make):
Parutlah kelapa dan buatlah santan +1 gelas. Haluskan bawang merah, bawang putih dan cabe.
Memarkan  sare dan laos. Kemudian tumislah bumbu-bumbu tersebut hingga harum, masukan daging kambing yang telah dipotong-potong. Masukan juga bumbu gulai/ kare setelah dicairkan dengan ¼ gelas air. Aduklah hingga rata. Tambahkan 2 gelas air rebus, diatas api kecil saja. Bila daging kambing telah agak lunak, masukan santan. Rebus hingga daging lunak. Waktu menghidagkan, taburi atasnya dengan bawang merah goring.

Sare crushed and laos. Then tumislah spices until fragrant, add the goat meat was cut into pieces. Put also spice curry / kare after diluted with ¼ cup water. Stir until blended. Add 2 cups of boiled water, over a small fire. When the lamb was a bit soft, add coconut milk. Boil until meat is tender. Menghidagkan time, sprinkle top with fried shallots).
